I found a recipe for "Simple White Cake" on AllRecipes and after reading all the comments made some recommended adjustments. I also made a mistake and misread 2 eggs as 3 eggs. It was the best cake I've ever eaten, so I'm sharing it here.
Servings 12 cupcakes
Ingredients
- 1 cup White Sugar
- 1/2 cup softened butter
- 3 Eggs
- 1 tbsp Vanilla Extract
- 1 1/2 cup All Purpose Flour
- 1 3/4 teaspoon Aluminum Free Baking Powder - Aluminum Free baking powder makes everything better
- 3/4 cup Milk
Instructions
Pre Prep
- Preheat oven to 350 degrees F
- Line muffin pans with paper liners
- Measure then sift flour (use the whole amount)
- Soften butter
The magic
- In stand mixer or medium bowl, cream sugar and butter well
- Beat the eggs into the cream, one at a time
- Stir in vanilla
- Mix the flour and baking powder
- Add the powder mixture to the creamed mixture slowly
- After the powder mixture is fully mixed in slowly add the milk
- Spoon batter into the muffin pans filling them half way
A little extra...
- Add food coloring to remaining batter
- Fill muffin pans with colored batter
- Use toothpick to swirl the two batter colors together
Baking & Cooling
- Bake full size cupcakes 20-25 minutes (mini cupcakes 10 minutes) Cupcakes are done when toothpick pulls clean
- Wait to cool for decorations
