I've eaten Hoppin' John for almost every New Years Day of my life. After introducing it to Daniel, it's a regular meal in our home. We have a simple version that we keep everything on hand for whenever possible.

Ingredients

  • 1 lbs sausage - half hot & half mild [or to taste]
  • 3 cans of black eyed peas - store brands work best b/c they aren’t over-cooked & mushy
  • 1.5 cups cooked rice - or 3/4 cups uncooked rice for slow cooker alternative
  • 1 onion
  • Crushed red pepper - To taste
  • 1-1.5 can of water - one of the empty black eye pea cans, add an extra half a cup for slow cooker alternative

Instructions

  • Brown sausage
  • Mix sausage & all ingredients OR Mix all ingredients except rice
  • Simmer on low until well heated & all the flavors meld together OR Cook on high in a slow cooker for 4 hours, add uncooked rice 2.5 hours after cooking starts.
