Ingredients
- 1 lbs sausage - half hot & half mild [or to taste]
- 3 cans of black eyed peas - store brands work best b/c they aren’t over-cooked & mushy
- 1.5 cups cooked rice - or 3/4 cups uncooked rice for slow cooker alternative
- 1 onion
- Crushed red pepper - To taste
- 1-1.5 can of water - one of the empty black eye pea cans, add an extra half a cup for slow cooker alternative
Instructions
- Brown sausage
- Mix sausage & all ingredients OR Mix all ingredients except rice
- Simmer on low until well heated & all the flavors meld together OR Cook on high in a slow cooker for 4 hours, add uncooked rice 2.5 hours after cooking starts.
