While looking for Mediterranean recipes to try while living in the Mediterranean we found this one, and it became a fast favorite.

Ingredients
- 3 tbsp olive oil
- 2 while smoked or soup sausages diced
- 2 medium onion, diced - or 1 large
- 4 cloves garlic, minced
- 3 tsp dried rosemary
- 2-4 skinless chicken breasts - (500g)
- 150 ml dry white wine
- 2 400g can diced tomatoes
- 1 tbsp tomato paste
- 1 dash pepper
- 1 splash water
Instructions
- Heat oil in deep non-stick pan, medium high heat
- When hot, add sausage. Fry until browning/crisping
- Remove sausage with slotted spoon, leaving fat in pan
- Add onions to pan
- Fry until starting to become translucent, then add garlic and herbs
- Fry a few more minutes until garlic and herbs are fragrant
- Spread the onions out, leaving some gaps to put in chicken
- Add chicken and season with pepper and another few dashes of Rosemary
- Fry for 5 minutes, flipping once (2.5 minutes per side) until onions are caramelizing and chicken has browned slightly
- Remove chicken, setting aside on a plate
- When the pan is hot again, add white wine
- Let bubble several minutes and reduce slightly
- Lower the heat to medium, return sausage to pan, add tomatoes, tomato paste, and a splash of water
- Cover and simmer for 15 minutes until sauce has thickened and reduced slightly
- Return chicken to pan, cover with sauce, simmer 15 more minutes uncovered
- Serve alone, with light pasta, or rice
