What do you do when you have over ripe bananas? I use to make banana bread. Not since we discovered these deliciously-decadent Banana Bread Muffin Top Cookies. We top them with Banana Butter Cream Icing, which put them over the top. They are fluffy, sweet, and amazing.

Ingredients
- 1 cup lard
- ½ cup white sugar
- ½ cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 bananas - peeled and mashed
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
Instructions
- Preheat oven to 350 degrees F (175 degrees C)
- Line cookie sheets with parchment paper.
- In medium bowl (stand mixer), cream together lard and sugar until smooth.
- Beat in eggs, vanilla extract, and bananas.
- Combine flour, baking soda, and salt in separate bowl.
- Blend thoroughly into the lard mixture to make a sticky batter.
- Drop by rounded tablespoons onto the prepared baking sheets.
- Bake 10 to 15 minutes in the preheated oven, or until lightly browned.
Notes
You can add nuts, chocolate chips, raisins, or whatever other little surprises you'd like to add during step #6.
