My Mom’s Chili

One of my all time favorite meals as a kid was my Mom’s chili... it was (is) magical. She would make stock pots of it, put it in individual containers and freeze it. We would heat it up for an after school snack (along with potato soup, vegetable soup and lasagna). I would fill it with cheese and saltines. I called my mom and got her recipe, it’s not quite as good when I make it’s close.

Ingredients

  • 1 lbs Ground Meat of your chose (I use ground chuck) - .5kg
  • 2 cans light red kidney beans
  • 1 med can tomato sauce
  • 2 cans diced tomatoes
  • 1 med-large onion, diced
  • 1 dash nutmeg
  • chili powder (to taste)

Instructions

  • Sauté diced onion until soft
  • Brown Ground Meat with onion & chili powder
  • Drain Grease
  • Add cans of beans, tomatoes, and tomato sauce to meat over med-low heat
  • Add nutmeg & additional chili powder to taste
  • Cook on medium for 30 minutes
  • Simmer for an additional 30 minutes & it’s good to serve, but it’s even better to simmer it longer
